Home Made Tofu Mayonnaise 美乃滋, 蛋黃醬

You can experiment with using less oil, or more tofu, according to your taste. You can also add finely chopped white onion or scallion to zip it up. If prefer, try spices to add flavor.

· 8 ounces tofu 荳腐2條
· 1/2 cup olive oil 橄欖油 1/2杯
· 2 tablespoons lemon juice 鮮檸檬汁2湯匙
· 1-2 teaspoons Dijon mustard 芥末1-2茶匙
· 1 teaspoon grated lemon rind 鮮檸檬茸1茶匙
· salt and pepper -- to taste 食鹽和胡椒適量
Combine first four ingredients in a blender and blend at lowest speed. Add grated lemon rind and season with salt and pepper. Continue blending high speed until thoroughly combined.

*You can add 4-6 garlic cloves, mashed with 1/2 teaspoon salt, to the mixture to make garlic mayonnaise.

NOTES : Using silken tofu (玉子荳腐) will make it easier to blend.

Best if used within a few days.
